Breakfast Tacos in Austin

This is a snapshot of my first foray into the world of breakfast tacos, an apparent staple in Austin, Texas. Fluffy scrambled eggs, soft cubed potatoes that turn to cream on the tongue, and sharp cheese, oozing into all the cracks and crevices, all swaddled up in a chewy flour tortilla. I had fairly low expectations, walking into the chain taco restaurant, Torchy’s: the surly cashier barely making us feel welcome and an unexpected wind biting our cheeks as we waited. But I walked away pleasantly surprised, with a stomach full of fatty, salty goodness for less than $4. I certainly had some pep in my step for the rest of my trip, from eating what many deem as a must-do for this part of the country.
